Ingredients

- 500g Cherry Tomatoes (halved)
- 1 half Cucumber (peeled, deseeded and sliced)
- 1 whole Red onion (halved and finely sliced)
- 90g Black or Kalamata olives (sliced)
- 100g Feta cheese (cut into small cubes)
- 1 handful Dried Oregano (optional)
Greek salad dressing
- 120ml Extra virgin olive oil
- 3 tbsp Red wine vinegar
- 1 tsp Dried oregano
- 1 whole Garlic clove (minced)
- 1 tsp Dijon mustard
- 1 tsp Honey
Method
Greek Salad
Peel the onion, chop in half and slice into very thin slices . Add to a large salad bowl
Cut a cucumber in half and then slice down the middle longways. Using a teaspoon scrape down the inside of each half to remove the pips and some of the flesh. Use a peeler and remove most of the skin and then cut into half or quarter shapes. Add to the salad bowl.
Cut the tomatoes. For cherry tomatoes cut them in half and for larger tomatoes you can cut them into quarters, or even random shapes. Add these to the bowl with the onion and cucumber.
Cut the olives in to 3-4 segments and add to the bowl as well and give everything a good mix.
Cut the feta into cubes and sprinkle over the salad.

Finally, if you're using oregano, sprinkle it over the salad. Leave the Greek salad in the fridge until ready to serve. When serving, add the Greek salad dressing and mix.

Back to mainCombine ingredients: In a small bowl or a jar with a tight-fitting lid, add the olive oil, red wine vinegar, minced garlic, dried oregano, Dijon mustard, salt, pepper, and honey/sugar (if using).
Whisk or Shake: If using a bowl, whisk vigorously until all the ingredients are well combined and the dressing looks slightly emulsified (creamy). If using a jar, screw on the lid tightly and shake vigorously for about 30 seconds to 1 minute until everything is fully blended.
Taste and Adjust: Taste the dressing and adjust seasonings as needed. You might want more salt, pepper, or a touch more vinegar depending on your preference.
